One of the most primeval trees, is Date tree (named Palm), which carries Seven thousand years of history. Its fruit have had a significant role in ancient people’s feeding and also occupation.

The palm’s fruit, Date, is rich in nutrients. 75% of it, is composed of sugars and carbohydrates. It contains plenty of vitamins A, B and C, In addition to protein, fat and minerals.

Fleshy part of the date is very sweet and tasty, which allocates approximately 50-88 % of its weight. Almost two-thirds of the weight is composed of different types of sugars, about a quarter is fruit juice of the date, and the rest consists of proteins, fats, minerals and vitamins.

Minerals in date includes Iron, Manganese, Calcium, Phosphorus, Sodium, Potassium and Copper. There is 1430 to 1500 Kcal of energy in 350-400 grams of date.

Kharak is called to palm fruit in a physiological stage when its texture is generally firmer and the color can be changed depending on the varieties of palm. Some dates in this stage are edible.

Classification of date by type

Dried Dates

It refers to a ripe date which the moisture is below 18%.

Semi Dried Dates

It refers to a ripe date with the moisture between 18% and 20%.

Soft Dates

It refers to a ripe date with the moisture between 20% and 23%.


It refers to a ripe and juicy date, which the moisture is between 23% and 38%.

Raisin is sweet and tasty dried fruit that is produced by driying grape. Based on types of grape the raisin has different colors. There are various types of grapes from which raisins produced, but the grapes that are generally used in raisin production are fleshy and have more sugar. Since grapes with seeds result in low quality raisins, red and white seedless grapes are used more in raisin production.

There are many uses for raisins. It is a favorite dried fruit among most people and it is also used as raw or cooked in meals. It is noteworthy that not only grape loses its benefits due to drying but also its sugar and energy increases. Meanwhile, the main grape sugar is fructose, which is not harmful for diabetics.

Raisins are made in three ways:

Sun dried, Shade dried, Sulphured

Pistachio nut is fruit of pistachio tree (Pistacia Vera L.) that belongs to the dark sumac (Anacardiaceae) family. Plants in this family are trees or shrubs.

Pistachio is one of the important oilseeds. Its components are the kernel and crust. Crust includes a firm portion called shell and a soft upper portion called hull. Pistachio Kernel includes a green shell that has a sweet taste.

Pistachio tree have long been cultivated in different parts of Iran. The wild pistachio forests in the northeast region of Iran and in conterminous areas with Afghanistan and Turkmenistan have an ancient background; it seems that pistachio tree has been domesticated and cultivated around 3 to 4 thousand years ago.

The first pistachio varieties in Iran were obtained from cultivation and domestication of wild pistachio trees. They were very limited in number and in appearance were similar to wild pistachios. Gradually by grafting and changing these varieties and consideration of farmers regarding sizes of pistachio kernels new varieties emerged.

Definition of common commercial size of pistachio:

In commercial view there are different common sizes for pistachios which displayed in 20-22 form as an example. This means that in this type 20 to 22 pcs of pistachios are available per ounce. The lower number indicates the bigger size of pistachio.
